Description
This bold and cheesy taco biscuit casserole layers seasoned beef, jalapeños, and sour cream over a golden biscuit crust—comfort food at its best.
Ingredients
2 pounds ground beef, browned and drained
1 ounce packet taco seasoning plus water listed on the back or homemade taco seasoning
16 ounce can large biscuits
½ cup sour cream
½ cup mayonnaise
8 ounces cheddar cheese, shredded and divided
1 medium onion, halved and sliced
2 medium tomatoes, sliced
1 medium red bell pepper, halved and sliced
4 ounces canned sliced Jalapeño peppers
Instructions
1. Preheat oven to 350°F and place your oven rack in the center. Spray a 13×9 glass baking dish.
2. Place biscuits in pan in a single layer and press into the pan, joining them together, pressing the dough halfway up the sides. Place pan on a baking sheet and bake for 12–15 minutes or until lightly browned. Remove and set aside, keeping oven on.
3. While biscuits bake, brown ground beef with taco seasoning and water as instructed on the packet. Transfer to bowl and set aside.
4. In a new bowl, combine sour cream, mayonnaise, 4 oz cheddar cheese, and half the onion. Mix well and set aside.
5. Sauté remaining onion and bell peppers in the same pan until slightly softened.
6. Layer on top of the biscuit crust in this order: taco meat, tomato slices, sautéed peppers and onions, jalapeños, sour cream mixture, and remaining cheese.
7. Bake uncovered for 30–40 minutes or until cheese is melted and crust edges are golden brown.
8. Let rest 5–10 minutes before slicing and serving.
Notes
Watch the biscuit crust closely—ovens vary. It should be only lightly browned before you add toppings.
Feel free to swap beef for black beans or add crushed tortilla chips for crunch.
