Description

Garlic Parmesan Chicken Meatloaves are juicy mini chicken meatloaves baked in a muffin pan, bursting with garlic and Parmesan flavor. Topped with a creamy Parmesan sauce, they make the perfect weeknight dinner that’s gluten-free friendly.


Ingredients

Scale

Meatloaves:

2 lbs ground chicken

1/2 yellow onion, diced (about 1/2 cup)

810 garlic cloves, pressed

3/4 cup breadcrumbs* or 2 slices dense bread, crumbled

1 egg

3 Tbsp fresh minced parsley

3 oz fresh grated Parmesan cheese

Salt, to taste

Fresh cracked black pepper, to taste

Optional: extra Parmesan cheese for topping

Cream Sauce:

2 Tbsp olive oil

3 garlic cloves, pressed

1 Tbsp all-purpose flour*

1 1/2 cups heavy whipping cream

3 oz fresh grated Parmesan cheese

1 Tbsp minced fresh parsley

Salt, to taste


Instructions

1. Preheat oven to 375°F and grease a muffin baking pan.

2. In a bowl, combine ground chicken, onion, garlic, breadcrumbs, egg, parsley, Parmesan, salt, and pepper. Mix well.

3. Scoop chicken mixture into muffin cups, shaping evenly. Top with Parmesan if desired.

4. Bake 22–25 minutes until juices run clear and internal temp reaches 165°F.

5. For sauce, heat oil in a pot over medium heat. Add garlic and sauté until fragrant.

6. Whisk in flour, then slowly add heavy cream while whisking until smooth.

7. Add Parmesan, whisk until melted and creamy. Stir in parsley and season with salt.

8. Top each mini meatloaf with creamy Parmesan sauce before serving.

Notes

For gluten-free, use GF breadcrumbs or bread and GF all-purpose flour, or omit flour for a thinner sauce.

To make one large meatloaf, bake at 350°F for 55–65 minutes in a 9×5 pan until internal temp reaches 165°F.

Always check temperature at the thickest part of the meatloaf.

Store leftovers in the fridge for up to 3 days.
