Description
These no-bake rice krispie ice cream sandwiches are a fun, nostalgic dessert made with chewy marshmallow cereal bars and creamy vanilla ice cream. Great for summer!
Ingredients
6 tablespoons unsalted butter
10 oz bag mini marshmallows
6 cups Rice Krispies cereal
1.5 quarts vanilla ice cream, slightly softened
Instructions
- Line a 9×13 pan with parchment paper or foil and set aside.
- In a large saucepan, melt the butter over medium heat.
- Add marshmallows and stir until completely melted and smooth.
- Remove from heat and immediately stir in Rice Krispies cereal until fully coated.
- Divide the mixture in half. Press one half firmly and evenly into the bottom of the prepared pan.
- Spread the softened ice cream evenly over the bottom cereal layer.
- Gently press the remaining cereal mixture on top of the ice cream.
- Freeze for at least 2 hours or until firm.
- Lift from pan using parchment, cut into squares, and serve.
Notes
Cool the rice krispie layer before adding the ice cream to prevent melting.
Wrap individual sandwiches in parchment and store in airtight container for up to 2 weeks.
For added flavor, sprinkle sea salt or drizzle melted chocolate on top before freezing.
